Nacho’s a la Conway

2 large bags of tortillas chips

300 g of cheddar cheese

4 chilies

2 pots of Guacamole


What you need to do


Grate up all the cheese and split in two, it seems a lot, but trust me on this one. De seed the chilies and slice up into little flecks and again split in two. Open 1 of the bags of chips and spread into a baking tray. Sprinkle one half of the cheese over the chips and then half the chili flecks, put into a hot oven for about 10 minutes till the cheese is well melted and the edges of the chips start to brown. Split into 4 portions and serve with a good spoonful of the Guacamole. Do the same with the other half of the ingredients.

How easy is that? Great recipe for a snack when the crew are hungry, and easy to do in rough weather. Top Tip, remember to wash your hands after messing with the chilies, I didn’t once and was in agony for about 20 minutes, after rubbing my eyes. Fresh cold water and loads of it is the only cure.
