BACON & CHEESE WRAPS
Serves 6
Prep time 15 minutes
Cooking time 45 minutes
1 400 gm packet puff pastry
6 rashers of back bacon
250 gm of cheddar cheese
1 beaten egg for brushing
Plain flour for dusting
Knob of butter for greasing
What you need to do
Pre-heat the oven to 220c. Roll out the pastry into a rectangle about 16” x 24” to make 6 x 8” squares, arrange these onto a greased baking sheet. Grate up the cheese and divide up into 6, and arrange on the pastry squares in a diagonal, from 1 corner to the opposite, about 2” in width. Now lay a rasher of bacon on top of the cheese. Take the corners that have no cheese on them and fold them to the middle, overlapping by about half an inch. Brush the pastry with the beaten egg and put in the pre-heated oven for 45 minutes. Turn them out of the oven, they should have risen and be golden brown.
These little puppies are a great breakfast treat or a snack for elevenses.
